Beluga Lentil and Kale Hot Salad with Sriracha Yogurt Dressing

“A delicious hot salad for a springtime supper with family and friends”



  • 1x 250g packet of Merchant Gourmet beluga lentils
  • 2 large handfuls of kale
  • 2 spring onions, chopped
  • 2 tomatoes, diced
  • For the dressing
  • 1 teaspoon sriracha hot sauce (or to taste)
  • 3 tablespoons plain Greek yogurt



Heat the lentils according to packet instructions.

Steam the kale for 1-2 minutes until tender and drain.

Divide the lentils and kale between 4 dishes and top with the spring onions and tomatoes.

For the dressing, mix the sriracha and yogurt together, then drizzle over the salad. Serve immediately.
