With panoramic views across the capital, brighter evenings and the arrival of new seasonal menus and a Sunday roast, there has never been a better time to venture 36 floors up to Sky Garden’s Darwin Brasserie.

Spring additions introduce a selection of dishes that capture the freshness of the season, including steak tartare, dill-cured Scottish salmon and ham hock terrine served with piccalilli and grilled sourdough. For mains, try a spring tart with creamed spinach, goat’s cheese, English asparagus and peas, or the impressive 18oz T-bone – a true centrepiece, recommended for two to three people to enjoy. For British comfort with a contemporary twist, the new pie range ticks all the boxes, with a choice of braised beef & milk stout, chicken, ham hock & leek, or roasted vegetables & Yorkshire blue cheese, served with mashed potatoes and buttered savoy cabbage.

Save room for the new desserts, including a caramelised lemon tart topped with fresh raspberries and crème fraîche, a white chocolate mousse paired with poached rhubarb and meringue pieces, and a hazelnut rocher for chocolate lovers, finished with a dollop of Chantilly cream.
The new Sunday roast menu blends British tradition with delicate seasonal flavours, offering a choice of Hereford beef sirloin, leg of salt marsh lamb, half roast chicken, or a roast squash and lentil Wellington, served with all the trimmings including roast potatoes, savoy cabbage, seasonal veg and lashings of red wine gravy.

The spring menu is available now and celebrates the very best of the season, perfect for relaxed dining in one of London’s most striking settings.
