Following extensive restoration of the magnificent Grade II* listed building, Haycock Manor Hotel is set to launch on 22 June 2021. Located in the heart of Cambridgeshire, it is one of the oldest surviving hotels in England and its imposing buildings lie at the centre of the beautiful medieval village known as Wansford-in-England. The first phase of the opening will see its 49 bedrooms unveiled alongside two restaurants and bar and lounge. The second phase to be completed in August and will comprise of a cookery school and farm shop and early in 2022, the hotel will launch a luxury spa and riverside glamping.
Haycock Manor Hotel will launch as a member of the prestigious consortiums Preferred Hotels & Resorts L.V.X. Collection and Pride of Britain.
The property has a remarkable history dating back to 1571, and the latest iteration is full of character but pays due respect to the hotel’s incredible past. The restoration has brought to life the historic fabric of the building and focused on creating individual bedrooms and public spaces that are both elegant and playful. The owners, Haycock Limited, describe the process as bringing heart and soul back to the property.

The bedrooms are divided into clusters with classic doubles, garden classics, feature rooms, junior suites or master suites. Each has its own identity, but it is in the feature rooms and suites that the hotel’s history has been brought to life – beams have been exposed, Elizabethan fireplaces and walls restored complimented by luxurious roll-top baths, four-posted beds, statement tiles and colour schemes, as well as state-of-the-art technology.
At the helm of the Haycock Manor kitchen is Executive Chef Lee Clarke. Whilst Lee will oversee all elements of the food and beverage including breakfast, afternoon tea and the more casual dining affair Haycock Kitchen, Lee’s main focus will be Prévost Restaurant. Recognised in the Michelin Guide, Prévost previously existed in the heart of nearby Peterborough, but from June 2021 will be housed in an Orangery style building with glass atrium overlooking the Haycock’s spectacular kitchen gardens. Joining Lee in the kitchen at Prévost is Sam Nash, who has spent the last six years garnering his skills at L’Enclume.
Haycock Kitchen, meanwhile, will serve a brasserie-style menu featuring seasonal grills and salads in the historic original Inn dating from 1534. Part of this restaurant is situated in the enormous historic kitchen with its ancient arched ceiling, one of the oldest original elements of the building. The restaurant will feature a large garden terrace overlooking the village high street.
Afternoon tea will be served in one of the hotel’s distinctive drawing rooms, complete with open fireplace and exposed beams and the Cocktail Bar will showcase the very best of British, new and old-world wines, with a strong focus on sustainable, organic producers.
Ahead of the spa launch in 2022, wellness will be weaved into all elements of the guest experience from the outset. An advanced fitness suite will provide escapism for those looking for an intensive workout or calm stretch with Yoga mats available in bedrooms. Electric bikes, canoes and paddleboards will provide for the perfect way to escape and enjoy all elements of the River Nene which runs through the hotel’s estate.
Guests can immersive themselves in the local countryside, explore the grand medieval churches and timber- framed buildings in nearby Stamford, visit Burghley horse trials. Other experiences will include taking a trip on the Nene Valley steam railway one of the longest in England with its own station in Wansford itself. The hotel’s Taittinger Afternoon Tea can even be served on board the steam train.
Exclusive experiences organised by the hotel will include flying lessons, private gin making with an artisan distillery, lessons with our chocolatier, along with many others.
